Homemade Wasabi Mayonnaise
Ingredients
- Whole egg - 2 pieces
- Mustard Greens - ½ teaspoon
- Olive Oil - 5 fl oz
- Salt - a pinch
- Sugar - a pinch
- Meyer Lemon Juice - 1 tablespoon
- Red Curry Powder - to taste
- Wasabi - to taste
- Italian chopped parsley - to taste
Step by Step guide
Step 1
Place the yolks in a bowl, add salt, sugar, and mustard. Mix all the ingredients well using a mixer.
Step 2
Carefully, drop by drop, add the olive oil to the yolk mixture while whipping it with the mixer, ensuring that the oil combines with the yolks into a homogeneous emulsion.
Step 3
Once the mayonnaise has reached the desired consistency and has thickened sufficiently, pour in the lemon juice (this will make the mayonnaise a bit thinner). Continue whipping until it reaches the desired state. The mayonnaise can be less or more thick. Add wasabi to taste and mix.
