Homestyle Pilaf

Ingredients

  • Meat - 3 lbs
  • Rice - 2 lbs
  • Carrot - 21.2 oz
  • Onion - 17.6 oz
  • Black Cumin (Cumin) - 1 tablespoon
  • Serviceberries - 1 tablespoon
  • Tagine Spice Mix - 1.5 tablespoons
  • Garlic - 1 head
  • Ground Black Pepper - to taste
  • Salt - to taste
  • Vegetable Oil - 4 fl oz
  • Boiling water - 24 fl oz
  • Turmeric - to taste

Step by Step guide

Step 1

Cut the onion into strips. Cut the meat into small pieces (cubes). Cut the carrot into strips.

Step 2

Heat a pot and pour in the oil, then heat it up. In a large amount of vegetable oil (about 150 ml), fry the onion until golden brown.

Step 3

Add the meat and fry until it turns slightly white.

Step 4

Add the carrot and sauté for 5–7 minutes (do not cover with a lid).

Step 5

Add cumin, barberry, turmeric, pilaf spice mix, salt, and pepper, then mix well.

Step 6

Pour in enough water to cover the meat. Cover with a lid and simmer for 35–40 minutes over medium heat.

Step 7

Rinse the rice 5–6 times in cold water.

Step 8

Then add the rice to the pot (do not mix with the meat!), leveling it out.

Step 9

Carefully pour in hot or warm water so that it covers the rice by 2 cm. Add a little salt. Cover with a lid and cook until the rice absorbs the water.

Step 10

Then place the garlic in the center, pressing it into the rice. Use a wooden stick to make holes (do not mix the rice and meat) for steam to escape. Cook covered until done (about 20–25 minutes).

Step 11

Then mix everything together and serve.
