Description

A Japanese sauce created for a special grilling technique that gives a glazing effect: 'teri' means shine, and 'yaki' means to grill. When processed with the sauce, the food takes on a caramelized shine from a marinade made of soy sauce, sake (or mirin), and sugar (or honey). The main destination for teriyaki is chicken dishes, including all its parts: wings, drumsticks, hearts, and gizzards. However, there's nothing stopping you from using teriyaki glaze on salmon skewers or royal shrimp. Ready-made sauces are sold in bottles, but homemade versions allow for experimentation: for example, you can substitute orange juice for sake.

  • Soy Sauce - 3 fl oz
  • Water - 3 fl oz
  • Orange juice concentrate - 2 fl oz
  • Honey - 1.4 oz
  • Garlic - 0.4 oz
  • Ginger - 0.5 oz
  • Raw cane sugar - 1.1 oz
  • Corn Starch - 0.2 oz

Step by Step guide

Step 1

Combine soy sauce, water, freshly squeezed orange juice, sugar, starch, and honey. Heat the mixture until the honey and starch are fully dissolved, stirring well.

Step 2

Add finely chopped ginger and garlic. Season with salt and pepper, and cook until the sauce has a thick, creamy consistency similar to sour cream.
