Description

Vinaigrette is often made with Dijon or whole grain mustard. To tone down its sharpness, honey or sugar is added to balance the heat. A touch of crushed garlic or shallots can also be included for extra spice. The bland taste of starchy ingredients in the salad—such as beans, pumpkin, and potatoes—is elevated to a confident crescendo by the honey vinaigrette. It also pairs well in a classic garden salad, alongside leafy greens, onions, and hard-boiled eggs.

Ingredients

  • Olive Oil - 3 spoons
  • Champagne Vinegar - 2 spoons
  • Honey - 1 tablespoon
  • Shallot - 1 piece
  • Dijon Mustard - 1 tablespoon
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Peel the shallot and finely chop it.

Step 2

Pour olive oil into a jar with a screw-top lid.

Step 3

Add vinegar, mustard, honey, shallots, salt, and pepper to taste.

Step 4

Seal the jar with a lid and shake it well (you can even do a little dance) until the vinaigrette turns into a thick creamy emulsion.
