Description
This horseradish tincture has no hint of sweetness — it's a robust and serious drink: it includes bay leaf, cloves, pepper, and dill.
Ingredients
- Vodka - 17 fl oz
- Horseradish Leaves - 0.6 oz
- Dill - 0.1 oz
- Mild Chili Spice - 0 oz
- Bay leaf - 3 pieces
- Coriander essential oil - 0.1 oz
- Clove - 5 pieces
- Green peppercorns - 0.2 oz
- Dijon Mustard - 1½ g
- Honey - 1.1 oz
- Cucumber Brine - 3 fl oz
Step by Step guide
Step 1
Dry the horseradish in a dehydrator. Pour vodka over all the ingredients.
Step 2
Next, let it infuse in a sous-vide at 131°F for 12 hours, or store it in a cool, dark place for 7 days.
Step 3
Strain out all the ingredients without squeezing too hard. Add honey and cabbage brine, and mix well. Chill before serving.
