Hot Salad with Lentils, Broccoli, and Feta

Ingredients

  • Lentils - 5.3 oz
  • Cardamom - to taste
  • Broccoli - 7.9 oz
  • Feta cheese - 2.6 oz

Step by Step guide

Step 1

Rinse and sort the lentils. Cover with plenty of water, add a bay leaf, cardamom, and bring to a boil. Cook uncovered until soft.

Step 2

Prepare the dressing: cut a chili pepper in half, remove the seeds, finely chop, and mix with olive oil, vinegar, honey, and spices. Chop green onions and add to the dressing.

Step 3

Divide the broccoli into small florets. Three minutes before the lentils are done, add the broccoli to the lentils. Cover and cook until both the lentils and broccoli are tender.

Step 4

Drain the cooked lentil mixture, remove the bay leaf, and add spices to taste. Crumble the cheese and serve the salad hot, sprinkled with cheese.
