Hunter's Chicken with Rice
Ingredients
- Long-Grain Rice - 1 cup
- Olive Oil - 3 tablespoons
- Chicken fillet - 12.7 oz
- Onion - 1 head
- Garlic - 2 cloves
- Orange Bell Peppers - ½ piece
- Anchovy fillet - 2 pieces
- Passata Tomato Sauce - 1 tablespoon
- Dry White Wine - ½ cup
- Crushed Tomatoes in Their Own Juice - 14.8 oz
- Pitted olives - 8 pieces
- Dried Rosemary - ½ teaspoon
- Balsamic Vinegar - 1 tablespoon
- Ocean salt - ½ teaspoon
- Ground Black Pepper - ¼ teaspoon
- Chopped Sage Leaves - 2 tablespoons
Step by Step guide
Step 1
Cook the rice in boiling water until ready. Drain the water.
Step 2
Meanwhile, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken fillet and fry for 3 minutes on each side. Transfer to a plate.
Step 3
In the same skillet, heat the remaining oil and sauté the finely chopped onion and diced red pepper, stirring, for 5 minutes.
Step 4
Then add the minced garlic and anchovy fillets. Cook for another minute, breaking up the anchovies.
Step 5
Next, add the tomato paste, tomatoes, vinegar, chopped olives, oregano, salt, and pepper. Cover and cook over medium heat for 10 minutes. Return the chicken to the skillet, cover, and cook for another 3 minutes.
Step 6
On plates, place the rice, top with chicken, drizzle with sauce, and sprinkle with parsley.
