Indian Lime Juice Rice
Ingredients
- Basmati rice - 1 cup
- Peas - 1½ tablespoons
- Canola Oil - to taste
- Black Mustard Seeds - 1 teaspoon
- Turmeric - ½ teaspoon
- Garlic - 4 cloves
- Chili Peppers - 4 pieces
- Asafoetida - 1 teaspoon
- Fresh Lime Juice - ⅓ cup
- Salt - to taste
Step by Step guide
Step 1
In a medium-sized pot, bring 6 cups of water to a boil. Add the rice and cook, stirring occasionally, for 10-12 minutes until the rice is done.
Step 2
Meanwhile, in a bowl, combine the peas with 1 cup of water; let sit for 30 minutes, then drain the water.
Step 3
Drain the water from the rice and transfer the rice to a bowl. Add oil to a skillet and heat over high heat.
Step 4
Sauté the mustard seeds until they start to pop, about 1-2 minutes. Add the peas and sauté until they develop a reddish-brown crust, about 5-7 minutes.
Step 5
Add the turmeric, curry leaves, and chili peppers; sauté until the garlic is golden brown, about 2-3 minutes.
Step 6
Add the asafoetida, mix well; combine with the rice, add the lime juice and salt.
