Description

The key is to find the right consistency for the batter — it's best to make a couple of test 'dollops' and adjust the batter with water or flour based on the results.

Ingredients

  • Wheat Flour - 10 tablespoons
  • Wheat Flour - 1 cup
  • Passata Tomato Sauce - 2 tablespoons
  • Garlic - 1 clove
  • Grated Ginger Root - 1 teaspoon
  • Turmeric - 1 teaspoon
  • Parsley - to taste

Step by Step guide

Step 1

In a large bowl, mix together the pea flour, wheat flour, and spices.

Step 2

Slowly add cold water while stirring until you achieve a thick pancake batter. You can add a couple of tablespoons of semolina.

Step 3

Add the tomato paste (or 2 fresh tomatoes) and finely chopped fresh herbs to the batter. Let it sit for about 10 minutes to allow the pea flour to swell properly.

Step 4

Fry in olive oil on both sides until golden brown and crispy.

Step 5

Serve hot.
