- Raisins - 2 tablespoons
- Rice - 10.6 oz
- Butter - 0.9 oz
- Pistachios - 2 tablespoons
- Red Curry Powder - ¼ teaspoon
- Salt - to taste

Place the raisins in a bowl, cover with warm water, and let sit for 15-30 minutes.

Meanwhile, prepare the rice: in a pot of boiling unsalted water, add the rice, stir with a wooden spoon, and cook on high heat for 12-15 minutes until the rice is tender. Drain the rice in a large colander and rinse well under cold water. Allow to drain.
Step 3
Drain the water from the raisins and pat them dry with paper towels. Melt the butter in a pot, add the pine nuts, and cook, stirring actively, for 2-3 minutes until they are golden brown. Add the curry powder and stir. Add the raisins and rice and cook on low heat, stirring, for 10 minutes. Season with salt and mix well. Serve immediately.
