Description

Rice is cooked with a cinnamon stick, cardamom, and cloves, allowing it to absorb these aromas during cooking. It is then topped with sautéed spices and onions.

Ingredients

  • Basmati rice - 2 cups
  • Water - 8 cups
  • Salt - 2 teaspoons
  • Cloves - 2 pieces
  • Green Cardamom Seeds - 2 pieces
  • Cinnamon - 1 piece
  • Vegetable Oil - 3 tablespoons
  • Mustard seeds - ½ teaspoon
  • Thyme - ½ teaspoon
  • Chili Pepper - ¼ teaspoon
  • Onion - 1 piece
  • Garlic - 3 cloves
  • Turmeric - ¼ teaspoon

Step by Step guide

Step 1

Rinse and soak the rice: place the rice in a sieve and rinse it under cool water until the water runs clear. Soak the rice in cool water for 30 minutes. Drain.

Step 2

Cook the rice with cloves, cardamom, and cinnamon. In a large pot, bring 8 cups of water and salt to a boil. Add the rice and stir. Add the cloves, cardamom, and cinnamon and simmer for 8–10 minutes.

Step 3

After 8 minutes, taste the rice to check if it is cooked. Cooking time may vary depending on the grain. If it is still too firm, cook for a few more minutes.

Step 4

Drain the water from the rice and rinse it under cold water, removing the spices. Once the rice is cooked to your liking, drain it in a colander and rinse with cold water to stop the cooking process.

Step 5

Remove the cloves, cardamom, and cinnamon and discard them. Set the rice aside to drain.

Step 6

Sauté the mustard seeds, cumin, chili flakes, and then the onion. In a skillet large enough to hold the rice, heat the oil over medium heat. Add the mustard seeds, cumin, and chili flakes.

Step 7

Cook until the mustard seeds begin to pop, then add the chopped onion. Cook until the onion is golden brown, about 5-7 minutes.

Step 8

Add the garlic, then the rice and turmeric: add the garlic and cook for another 2–3 minutes. Add the rice and mix well. Sprinkle the rice with turmeric and mix thoroughly. Cook for another 3-4 minutes, stirring frequently.
