Ingredients
- Onion - 1 head
- Chicken Broth - 12 fl oz
- Garlic - 2 cloves
- Wheat Flour - 3 spoons
- Vegetable Oil - 3 spoons
- Curry - 2 spoons
- Chicken fillet - 26.5 oz
- Cilantro - 1 piece
- Almond - 0.9 oz
- Raisins - 2 spoons
- Lemon - ½ pieces
- 10% cream - 2 spoons
- Natural Yogurt - 2 spoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Bring the broth to a boil. Peel and chop the onion and garlic, then gently sauté them in vegetable oil for 5 minutes, until they soften.
Step 2
In a large bowl, mix the flour with curry powder, then cut the chicken breasts into 1-inch cubes and evenly coat them in the mixture. Transfer the chicken and flour mixture to a skillet and sauté, stirring, for 3 minutes.
Step 3
Rinse, dry, and chop the cilantro. Set aside a pinch for garnish, and add about 1 tablespoon to the skillet along with the raisins and hot broth. Stirring, bring to a boil, then reduce the heat and simmer for 10 minutes.
Step 4
In a dry skillet, toast the almonds. In a separate bowl, squeeze the juice of half a lemon.
Step 5
Once the chicken is cooked, remove the skillet from the heat and add the almonds, lemon juice, yogurt, and cream. Season with salt and pepper to taste. Gently reheat without bringing to a boil. Garnish with fresh cilantro.
