Indian Tomato Rice
Ingredients
- Basmati rice - 1 cup
- Canola Oil - ¼ cup
- Black Mustard Seeds - 1 tablespoon
- Turmeric - ¼ teaspoon
- Dried Arbol Chili Peppers - 3 pieces
- Minced garlic - 2 cloves
- Onion - 1 head
- Tomatoes - 3 pieces
- Asafoetida - ¼ teaspoon
- Coarse Salt - to taste
Step by Step guide
Step 1
In a medium-sized pot, bring 6 cups of water to a boil.
Step 2
Add the rice and cook, stirring occasionally, for 10-12 minutes until the rice is done.
Step 3
Drain the water from the rice and transfer the rice to a bowl. Add oil to the pan and heat over high heat.
Step 4
Sauté the mustard seeds, turmeric, curry leaves, and chili for 1-2 minutes until the seeds start to crackle.
Step 5
Add the garlic, onion, and tomatoes; sauté until the tomatoes are cooked, about 6-8 minutes.
Step 6
Add the asafoetida and salt; combine with the rice.
