Irish Pie (Shepherd's Pie)

Ingredients

  • Rack of Lamb - 24.7 oz
  • Red Grape Juice - 5 fl oz
  • Lean Beef - 8.8 oz
  • Chicken Broth - 7 fl oz
  • Thyme - 1 tablespoon
  • Passata Tomato Sauce - 6.3 oz
  • Rosemary - 1 teaspoon
  • Worcestershire Sauce - to taste
  • Salad Potatoes - 31.7 oz
  • Butter - 1.8 oz
  • 10% cream - 1.8 oz
  • Egg white - 3 pieces
  • Grated Pecorino Pepato Cheese - 4.2 oz
  • Salt - to taste
  • Carrot - 1 piece
  • Onion - 1 head
  • Garlic - 4 cloves
  • Ground Black Pepper - to taste
  • Olive Oil - 0 fl oz
  • Milk - 3 fl oz
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

It's best to prepare as many ingredients in advance as possible. This will make the process quicker and help avoid confusion. Grate the carrot and onion. Finely chop (crush/grate) the garlic. It's preferable to have the wine, broth, and tomato paste ready at hand. Peel the potatoes, cut them into medium-sized pieces, and set them to boil until cooked.

Step 2

Heat a skillet. Sauté the ground meat in olive oil over high heat. You'll need to work vigorously with a wooden spoon (or another tool) to ensure you get browned meat rather than a large patty.

Step 3

Once the meat is browned and excess fat from the lamb has rendered out, add salt, coarsely ground black pepper, garlic, and the grated onion and carrot. Sauté for a bit, stirring vigorously.

Step 4

Add Worcestershire sauce and mix. Then add the tomato paste and mix again. Now, add the red wine, thyme, and rosemary.

Step 5

When the wine evaporates, add the chicken broth and cook for about 5 minutes. After that, the meat needs to be dried a bit. Transfer it to a sieve to drain off any excess fat. That's it. The meat is ready.

Step 6

By this time, the potatoes should be cooked. Mash them. Add salt and pepper to taste. Mix well. Add the yolks. Mix thoroughly. Add most of the grated Parmesan (you can never have too much cheese, right?). Mix again.

Step 7

Spread the meat mixture into a baking dish. Level it out.

Step 8

Top with the mashed potatoes. Sprinkle with more Parmesan. Place in the oven at 410°F for 25–30 minutes. The mash should brown slightly by this time. If it hasn't, you can brown it by turning on the grill. At this stage, before placing it in the oven, you can 'decorate' the pie. For example, you can create a pattern on the smooth mash with a fork, or you can randomly poke it with a fork. I believe a bit of chaos suits it better than order.
