Ingredients

  • Veal - 0 lbs
  • Carrot - 5 oz
  • Onion - 5 oz
  • Celery stalk - 5 oz
  • Thyme - 4 stalks
  • Baking Tomatoes - 5 oz
  • Dark Ale - 1½ l
  • Potato - 20 oz
  • Green Peas - 20 oz
  • Daikon - 20 oz
  • Vegetable Oil - 0 fl oz
  • Butter - 5 oz
  • Wheat Flour - 1 tablespoon
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Parsley - to taste

Step by Step guide

Step 1

Marinate the diced veal with beer, carrots, celery, and onion. Add a pinch of salt, a pinch of ground pepper, and 3-4 sprigs of thyme per kilogram of meat. Marinate the meat for two days in the refrigerator at a temperature between +1 and +40°F.

Step 2

After two days, strain the marinade and blend it until smooth. Sear the meat in a mixture of vegetable and butter until it forms a crust. It should appear cooked on the outside while remaining raw on the inside. Cook in small batches to avoid excessive moisture. The meat should be seared, not boiled.

Step 3

Next, transfer the meat (if it has been sautéed in a pan) to a large saucepan, add canned tomatoes (200 g for every kilogram of meat), and a liter of dark beer, and simmer for two hours on the lowest heat. After that, add the marinade blended in a blender, sautéed flour in butter for thickening the sauce (50 g of butter for each tablespoon of flour), roasted potatoes cut into small cubes (roast the potatoes with vegetable oil, thyme, and salt), green peas, and diced daikon radish or turnips that have been briefly cooked in salted water. You can, of course, simmer all these vegetables raw along with the meat. However, it is better to add them at the last moment already cooked. This way, the flavors become more pronounced, and the potatoes in the stew will have the taste of well-cooked potatoes, rather than the same flavor as the meat.

Step 4

After all the vegetables have been added along with salt, pepper, and chopped parsley to taste, simmer the stew for about five minutes and serve. If everything is done correctly, you'll experience the effect described in the social ads in the Moscow metro: 'The city is the unity of differences.'
