Irish Stew with Caraway
Ingredients
- Lamb Neck Fillet - 7.1 oz
- Onion - 1 head
- Salad Potatoes - 6 pieces
- Bay leaf - 4 pieces
- Water - 15 cups
- Ground Caraway - a pinch
- Salt - to taste
- Ground Black Pepper - to taste
- Parsley - 1 bunch
Step by Step guide
Step 1
Wash the lamb, trim off the membranes, and cut into large cubes. Finely chop the onion. Peel the potatoes and cut into cubes.
Step 2
In a pot, place the lamb, half of the onion, add the bay leaves, sprinkle in the caraway, and pour in enough water to just cover the meat. Place on the heat, bring to a boil, season with salt and pepper to taste, reduce the heat to low, cover with a lid, and simmer for about 1 hour until the lamb is tender.
Step 3
Add the potatoes and the remaining onion to the pot with the meat and simmer for another hour.
Step 4
Wash the parsley, shake off the water, and finely chop.
Step 5
Serve the stew at the table in the pot in which it was cooked. Before serving, sprinkle with the chopped parsley.
