Description
From the book by Jane Smith, 'Jane's Kitchen: Armenian Culinary Recipes.'
Ingredients
- Beef - 42.3 oz
- Pork Blood - 10.6 oz
- Onion - 7.1 oz
- Walnuts - 7.1 oz
- Ghee - 17.6 oz
- Bulgur - 14.1 oz
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
First, we prepare the filling. For this, we pass the meat (700 g) and onions through a meat grinder. We sauté the resulting minced meat in a generous amount of melted butter and add crushed walnuts. Season with salt and pepper to taste.
Step 2
Now we prepare the filling for the outer layer. Pass the meat (500 g) through a meat grinder twice along with bulgur. From the resulting mixture, form small balls, make a dent with your finger, fill it with the filling, and shape it into a "lemon". Place the finished ishlis in the freezer. They can be stored for a considerable amount of time.
Step 3
Boil the ishli in salted water for about 20-25 minutes. Serve with lemon.
