Italian Bean Salad
Ingredients
- Red Onion - 1 head
- Red Wine Vinegar - 3 tablespoons
- Canned White Beans - 2 cans
- Kalamata olives - 10 pieces
- Pickled capers - 3 tablespoons
- Canned tuna in olive oil - 2 cans
- Cherry Tomatoes - 8.8 oz
- Olive Oil - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel and thinly slice the onion into half rings. In a bowl, mix the onion with 2 tablespoons of vinegar. Drain the liquid from the beans and add the beans to the bowl.
Step 2
Break the olives, remove the pit, and add them to the bowl along with the capers and tuna (drain the oil).
Step 3
Add the cherry tomatoes, olive oil, and the remaining vinegar. Season to taste, mix well, and serve.
