Italian Chicken Liver Salad

Ingredients

  • Chicken Liver - 17.6 oz
  • Onion - 1 head
  • Olive Oil - 1 fl oz
  • Garlic - 2 cloves
  • Brandy - 1.8 oz
  • Capers - 1 tablespoon
  • Chicken Broth - 3 fl oz
  • Anchovy fillet - 2 teaspoons
  • Mixed salad greens - 7.1 oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Fig - 4 pieces
  • Honey - 1 tablespoon
  • White bread - 7.1 oz

Step by Step guide

Step 1

Rinse the liver, cut it, and sauté in olive oil with onion and garlic. Once the liver is cooked, pour in the brandy, diluted halfway with chicken broth. Simmer for 15 minutes.

Step 2

Combine the liver with capers, anchovy essence, and salad greens. Season with salt and pepper.

Step 3

Wash the figs and cut each fruit into four pieces. Combine with the liver and salad.

Step 4

For the dressing, whisk together olive oil and honey.

Step 5

Dress the salad and sprinkle with croutons. To make croutons, cut the bread into cubes and toast in a dry skillet or in the oven.
