Ingredients
- Artichoke bottoms - 6 pieces
- Fava Beans - 2 cups
- Onion - 1 head
- Pancetta - 2.1 oz
- Garlic - 3 cloves
- Green Peas - 2 cups
- Swiss chard leaves - 1 bunch
- Olive Oil - 3 tablespoons
- Chicken Broth - 2 cups
- Salt - to taste
- Ground Black Pepper - to taste
- Fresh Mint - 0.8 oz
- Chopped Sage Leaves - ¼ cup
Step by Step guide
Step 1
In a large pot, heat the olive oil and add finely chopped onion and diced pancetta. Cook for a few minutes until the onion is soft, then add the minced garlic. Cook for another 1-2 minutes.
Step 2
Add 1.5 cups of broth and the cleaned and chopped artichokes, and cook for 10 minutes.
Step 3
Add the beans and cook for another 10 minutes, then add the green peas and 5 cups of chopped Swiss chard. Cook for another 8-10 minutes until the peas are tender.
Step 4
Add the finely chopped mint and parsley, season with salt and pepper.
Step 5
Serve in small bowls drizzled with good olive oil.
