Italian Lentil Soup
Ingredients
- Celery root - 2 stalks
- Carrot - 2 pieces
- Garlic - 6 cloves
- Olive Oil - 2 tablespoons
- Vegetable Broth - 1 qt
- Red Lentils - 12.3 oz
- Canned tomatoes - 24.7 oz
- Bay leaves - 4 pieces
- Dried thyme - ¼ teaspoon
- Ground Black Pepper - ¼ teaspoon
- Ground Paprika - 1 teaspoon
- Ground chili pepper - a pinch
- Young Spinach - 5.3 oz
- Suluguni Cheese - to taste
Step by Step guide
Step 1
Heat the oil in a large pot over medium-high heat. Add the carrot and celery. Sauté for 6-7 minutes, stirring regularly.
Step 2
Add the garlic and sauté for another 1-2 minutes until fragrant, continuing to stir.
Step 3
Add the broth, lentils, tomatoes (I used passata), bay leaves, thyme, pepper, and mix. Continue to cook until it reaches a gentle boil.
Step 4
Reduce the heat, partially cover with a lid, and continue to simmer on low heat for about 25-30 minutes until the lentils are tender.
Step 5
Add the spinach and continue to cook for 5 minutes, or until softened.
Step 6
Taste and season with salt and pepper as needed. Remove the bay leaves and serve with cheese and fresh herbs if desired.
