Italian Pasta and Spinach Salad

Ingredients

  • Pasta (corkscrew) - 2½ cups
  • Marinated cherries - 2 cups
  • Spinach - 6.3 oz
  • Melted Cheese - 4.2 oz
  • Onion - 1 head
  • Champagne Vinegar - ¼ cup
  • Chopped Sage Leaves - 2 tablespoons
  • Chopped Sage Leaves - 1 tablespoon
  • Olive Oil - 2 tablespoons
  • Salt - ¼ teaspoon
  • Ground Black Pepper - 0.1 teaspoon
  • Garlic - 2 cloves

Step by Step guide

Step 1

Cook the pasta until al dente, drain, and rinse under cold running water.

Step 2

For the dressing, combine all ingredients (except for the spinach, cheese, and pasta) in a large deep bowl and whisk lightly, then add the tomatoes.

Step 3

Add the pasta to the bowl with the tomatoes, then add the spinach and mix everything well.

Step 4

Chill in the refrigerator for 5–10 minutes.

Step 5

Before serving, sprinkle the pasta salad with cheese.
