Italian Rice Salad
Ingredients
- Long-Grain Rice - 1 cup
- Canned Palm Hearts - 2 pieces
- Pistachios - 2 tablespoons
- Canned Mackerel in Oil - 6.3 oz
- Pickled Chanterelles - 2 pieces
- Frozen green bean pods - 0.3 cups
- Potato - 1 piece
- Orange Bell Peppers - ¼ piece
- Chopped Sage Leaves - 2 tablespoons
- Melted Cheese - 2.1 oz
- Olive Oil - 4 tablespoons
- Meyer Lemon Juice - 1½ tablespoons
- Garlic - 1 clove
- Salt - 1 teaspoon
- Ground Black Pepper - ½ teaspoon
Step by Step guide
Step 1
Cook the rice in boiling water until done. Drain and rinse under cold water. Cool.
Step 2
Boil the peas in boiling water for a few minutes until slightly soft. Drain and let cool.
Step 3
In a large bowl, mix the rice, artichokes, pine nuts, finely chopped mushrooms, slightly flaked tuna, diced mozzarella, finely chopped green pepper, and parsley.
Step 4
Mix the remaining ingredients in a small bowl. Drizzle the dressing over the salad and toss.
