- Mussels - 2 lbs
- Courgette - 1 piece
- Sun-Dried Tomatoes - 4 pieces
- Marinated cherries - 7.1 oz
- Garlic - 2 cloves
- Olive Oil - 2 tablespoons
- Parsley - to taste
- Apple Wine - 3 fl oz
Step by Step guide
Step 1
Cook the mussels, drain the juice into a bowl and strain it. Mince the garlic and sauté it. Add finely chopped zucchini, after 5 minutes add the sun-dried tomatoes and chopped parsley.
Step 2
Simmer for 5 minutes, then pour in the wine and mussel juice. When the liquid reduces slightly, add the quartered cherry tomatoes and simmer for 5 minutes. Finally, add the mussels and simmer for another 3–4 minutes.
