Italian-Style Schnitzel with Ham and Sage
Ingredients
- Veal Cutlets - 4 pieces
- Chopped Sage Leaves - 8 pieces
- Parma Ham - 4 slices
- Butter - 4 tablespoons
- Olive Oil - 1 tablespoon
- Dry White Wine - 3 fl oz
- Salt - to taste
- Chicken Broth - 7 fl oz
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Rinse the schnitzels and let the water drain. Place a slice of ham on each schnitzel. Top with 2 sage leaves and secure with 2 toothpicks.
Step 2
Heat 1 tablespoon each of butter and olive oil in a skillet. Fry the schnitzels on both sides for 2 minutes.
Step 3
Remove the schnitzels from the skillet and keep them warm.
Step 4
Pour the wine and vegetable broth into the skillet, season with salt and pepper. Add the remaining cold butter while whisking the sauce.
Step 5
Place the meat back in the skillet and simmer for about 3 minutes.
Step 6
Serve with boiled rice and vegetables, such as stewed tomatoes.
