Italian White Bean and Red Onion Salad
Ingredients
- White Beans - 17.6 oz
- Celery stalk - 1 piece
- Carrot - 1 piece
- Activated Baking Soda - a pinch
- Onion - ½ head
- Fresh Rose Hips - 1 sprig
- Olive Oil - ½ cup
- Red Wine Vinegar - 4 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
- Garlic - 2 cloves
- Chopped Sage Leaves - 0.7 oz
- Spanish onions - 2.1 oz
Step by Step guide
Step 1
Pour the dry beans into a bowl and cover with cold water. Add a pinch of baking soda, stir, and let sit for 12 hours.
Step 2
Drain the beans and transfer them to a pot. Cover with water and add the halved carrot, halved celery, and the sprig of rosemary. Bring to a boil, cover, reduce the heat, and cook until tender. Drain and remove the vegetables and rosemary.
Step 3
Transfer to a bowl and while the beans are warm, add the olive oil, vinegar, minced garlic, finely chopped onion, and parsley. Season with salt and pepper. Mix well and serve at room temperature.
