- Basil - to taste

- Marinated cherries - 17.6 oz
- White fish - 4 pieces
Step by Step guide
Step 1
Take the white fish fillets with skin, season to taste. Heat 1 tablespoon of olive oil in a large skillet and fry the fillets skin side up for 2–3 minutes until crispy.
Step 2
Place the fried fillets skin side down in a large baking dish. Sprinkle with halved cherry tomatoes, then add sliced black olives, and top with pine nuts. Season with salt and pepper.
Step 3
Put the baking tray in an oven preheated to 356°F (350 degrees Fahrenheit) and bake for 12–15 minutes until the fish is cooked through. Remove from the oven, sprinkle with a handful of fresh basil, and serve on plates. Before serving, drizzle the fish with olive oil.
