Ingredients
- Chicken hearts - 10.6 oz
- Chicken gizzards - 10.6 oz
- Chicken Liver - 10.6 oz
- Toasted Cumin Seeds - 1 teaspoon
- Onion - 2 pieces
- Turmeric - 1 tablespoon
- Garlic - 3 cloves
- Mild Chili Spice - to taste
- Olive Oil - 4 tablespoons
- Paprika - 1 tablespoon
- Salt - to taste
Step by Step guide
Step 1
Wash, clean, dry, and chop the chicken offal into pieces the size of half a heart (set the liver aside). Peel and segment the onion. Finely chop the chili pepper and garlic.
Step 2
In a hot pan, sauté the gizzards in oil, add 1 cup of water, and simmer on low heat until tender and the water evaporates (about 2 hours).
Step 3
Add and sauté the hearts on high heat, sprinkle in the chili pepper and garlic, and after a couple of minutes, add the onion. Sauté the onion until soft, then add ground cumin, paprika, and turmeric, mix well, and after a couple of minutes, add the liver, quickly sauté, cover, and let sit for 10 minutes.
Step 4
Serve with mujaddara or pita.
