Joel's Mashed Potatoes
Ingredients
- Potato - 17.6 oz
- Butter - 8.1 oz
- Milk - 2 fl oz
- Salt - to taste
Step by Step guide
Step 1
Prepare all the ingredients. Cut the butter into small cubes and chill.
Step 2
Wash the potatoes, place them in a pot, cover with water, add salt (10 g per 1 liter), and boil until tender.
Step 3
Allow the cooked potatoes to cool slightly and then peel them. It's important that the potatoes remain hot during this process.
Step 4
Pass the potatoes through a vegetable ricer.
Step 5
Transfer the potatoes to a saucepan, and in another small saucepan, heat the milk until it is almost boiling.
Step 6
While gently reheating the puree, gradually add the cold butter cubes one at a time, continuously stirring with a wooden or silicone spatula.
Step 7
Gradually fold in the hot milk.
Step 8
Pass the finished puree through a fine sieve two to three times.
Step 9
At the very end, taste and season with salt to your liking.
Step 10
Serve hot with your favorite meat. A steak or duck confit would pair perfectly.
