Juicy Duck Breast
Ingredients
- Duck Breast - 10.6 oz
- Fresh Rose Hips - 1 sprig
- Garlic - 0.9 oz
- Ocean salt - to taste
- Pickled Eggplant with Peppers - 6 pieces
- Butter - 0.5 oz
- Grated Ginger Root - ½ teaspoon
Step by Step guide
Step 1
Crush the garlic with a chef's knife.
Step 2
Make incisions in the skin of the duck breast.
Step 3
Place the duck skin-side down in a dry, hot skillet and season with salt.
Step 4
Once the fat renders from the skin, add the green pepper, garlic, and rosemary.
Step 5
After 3–5 minutes (when the skin turns golden), flip the breast and reduce the heat to medium.
Step 6
Add a piece of butter.
Step 7
Add ground ginger to the butter.
Step 8
Sear for another 5 minutes, basting the breast with the fat.
Step 9
Transfer the garlic, pepper, and rosemary to a baking dish.
Step 10
Place the duck on top and send it to the oven preheated to 320°F.
Step 11
After 8 minutes, the duck is ready. Slice thickly and serve.
