Julienne of Honey Mushrooms
Ingredients
- Salted honey mushrooms - 6.2 oz
- Olive Oil - 1 tablespoon
- Butter - 0.4 oz
- 33% Cream - 2 fl oz
- Mayonnaise - 2 tablespoons
- Garlic - 0.4 oz
- Onion - 1.1 oz
- Ocean salt - to taste
- Ground Black Pepper - to taste
- Parmesan Cheese - 1.2 oz
- Melted Cheese - 2.8 oz
- Chili Flakes - to taste
- Arugula - to taste
- Flaky sea salt - a pinch
Step by Step guide
Step 1
Heat olive oil in a skillet. Add a pinch of coarse salt.
Step 2
Wash the mushrooms and cut off the bases of the stems.
Step 3
Finely chop the onion and garlic.
Step 4
Chop the mushrooms into small pieces.
Step 5
Add butter to the skillet.
Step 6
Add the mushrooms and onion.
Step 7
Sauté, stirring, for 2–3 minutes over high heat.
Step 8
Season with salt and pepper.
Step 9
After 2 minutes, add the garlic and reduce the heat to medium.
Step 10
Add the cream, stir, and sauté for about 3 minutes.

Cut the mozzarella into cubes.

Grate the parmesan cheese finely.

Add mayonnaise to the mushrooms. Mix well.
Step 14
Transfer the mushrooms to ramekins.
Step 15
Top with mozzarella.

Sprinkle parmesan on top and season with chili flakes.

Place in a preheated oven at 356°F for 15 minutes.
Step 18
Let cool slightly, garnish with herbs, and serve.
