Kamchatka Crab Cakes with Mustard Sauce

Ingredients

  • Chicken Egg - 1 piece
  • Mayonnaise - 10.9 oz
  • Dijon Mustard - 2.1 oz
  • Worcestershire Sauce - 1 fl oz
  • Celery salt - 2.6 oz
  • Chopped Sage Leaves - 0.4 oz
  • Crab Meat - 17.6 oz
  • Breadcrumbs - 5.3 oz
  • Vegetable Oil - 7 fl oz
  • Pickles - 1.8 oz
  • Spanish onions - 0.4 oz
  • Meyer Lemon Juice - 0 fl oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Mustard Greens - to taste
  • Paprika - a pinch
  • Bay leaf - to taste
  • Chili Flakes - to taste
  • Ground Nutmeg - a pinch
  • Ground clove - a pinch
  • Cardamom - to taste
  • Grated Ginger Root - a pinch

Step by Step guide

Step 1

To prepare the sauce, combine 250 g of mayonnaise, 50 g of pickles, 10 g of Dijon mustard, 10 g of finely chopped red onion, 20 ml of lemon juice, salt, and pepper. Place in the refrigerator.

Step 2

To prepare the crab cakes, combine the egg, mayonnaise, mustard, Worcestershire sauce, spice mixture, salt, celery, and parsley in a large bowl and mix thoroughly.

Step 3

Add the crab meat and breadcrumbs. Mix everything together, being careful not to break the texture of the meat.

Step 4

Form 6 patties and place them on a prepared baking sheet.

Step 5

Cover and let chill in the refrigerator for 1 hour.

Step 6

Heat a large skillet over medium heat, add the oil. When the oil is hot, place the patties in the skillet and cook until golden brown, about 3-5 minutes on each side.

Step 7

You can serve them as a burger in a bun, or simply with tartar sauce and French fries.
