Ingredients
- Celery salt - ½ piece
- Bacon - 2.5 oz
- Pickled Chanterelles - 4.9 oz
- Onion - 1 piece
- Garlic - 1 clove
- Ground Black Pepper - to taste
- Ocean salt - to taste
- Olive Oil - 5 tablespoons
Step by Step guide
Step 1
Slice the celery root into thin slices.
Step 2
Cut the bacon into thick strips.
Step 3
Chop the mushrooms into small pieces.
Step 4
Peel and crush the garlic clove with a chef's knife. Finely chop the onion.
Step 5
In a heated skillet, add 2 tablespoons of oil, crushed garlic, and bacon.
Step 6
Stir as soon as the bottom side browns.
Step 7
After 2–3 minutes, transfer the bacon to a bowl.
Step 8
In the rendered fat, add the onion and mushrooms.
Step 9
After 2–3 minutes, stir and reduce the heat to medium. Sauté for another 5 minutes, stirring occasionally. Then remove from heat and season with salt.

Add about 3 tablespoons of oil to the skillet and add the celery.

Once the bottom side browns, season with salt and stir.

After 3 minutes, add pepper and stir again. Reduce the heat to medium.
Step 13
After 3–4 minutes, transfer the "potatoes" to a serving dish.
Step 14
Add the mushrooms and bacon cracklings. Mix, garnish with dill, and serve.
