Description

To give the rice a different flavor and aroma, add a teaspoon of rose water and a few pinches of ground saffron instead of cardamom.

Ingredients

  • Rice - 7.1 oz
  • Milk - 17 fl oz
  • Bay leaf - 2 pieces
  • Demerara Sugar - 0.1 oz
  • Cardamom - ½ teaspoon
  • Chopped almonds - 2 tablespoons

Step by Step guide

Step 1

Rinse the rice and drain it in a colander to dry.

Step 2

In a tall pot, bring the milk to a boil. Adjust the heat so that it rises and simmers continuously without overflowing. Keep it like this for a few minutes.

Step 3

Add the rice and bay leaves to the boiling milk. Stir continuously and cook over medium heat for 15–20 minutes depending on the type of rice.

Step 4

Add the sugar, almond flakes, and cardamom. Cook for another 3–5 minutes, then remove from heat and let it cool. The colder the kheer, the tastier it is!
