Ingredients
- Pickled Chanterelles - 3 lbs
- Onion - 7.1 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Parsley - 0.7 oz
- Cilantro - 1.8 oz
- Wheat Flour - 2 lbs
- Water - 11 fl oz
- Adjika - 0.7 oz
Step by Step guide
Step 1
Prepare the dough. Thoroughly mix the flour, salt, and water until a homogeneous mass is formed. Let the dough rest for 30 minutes.
Step 2
Divide the dough into 5 parts, roll each part with a rolling pin about 20 times. Shape into logs and cut into pieces of 45 grams each. Roll each piece 10–15 times to make the dough elastic.
Step 3
Prepare the filling. Rinse and clean the champignon mushrooms, cut them into small cubes, and sauté in vegetable oil for 10 minutes. Peel the onion, cut it into small cubes, and sauté in vegetable oil until golden brown.
Step 4
Finely chop the parsley and cilantro. Mix the mushrooms with the onion, pepper, herbs, and spices. Finally, add salt. Before wrapping the filling in the dough, it is essential to taste the filling for salt.
Step 5
Place a tablespoon of filling in the rolled-out dough circle and fold the edges in a circular motion to create a tail. Press the tail firmly and cut off any excess with a knife.
Step 6
Bring water to a boil, add salt, drop in the khinkali, and stir constantly with a wooden spoon. Cook for 5-6 minutes.
