Description
Khurze with nettle is a national dish from Dagestan. It is prepared in spring when the nettle is just coming into season. Very healthy and very tasty!
Ingredients
- Nettle - 35.3 oz
- Wheat Flour - 17.6 oz
- Chicken Egg - 1 piece
- Onion - 1 head
- Vegetable Oil - 0 fl oz
- Salt - a pinch
Step by Step guide
Step 1
Clean the nettle, rinse thoroughly, and dry on a towel. Then chop finely with a knife or in a blender.
Step 2
Sauté the finely chopped onion in a pan and add the nettle. Simmer.
Step 3
Transfer the simmered nettle to a bowl. Let it cool. Add salt. Add the egg. Mix — this will be the filling.
Step 4
Prepare a regular unleavened dough. Roll it out thinly and cut out circles using a cup.
Step 5
Fill the circles with the filling and braid them.
Step 6
Boil water in a pot, add salt. Carefully drop the khurze into the boiling water and stir gently with a slotted spoon to prevent sticking. Once they float, cook for about 10 minutes.
Step 7
Serve with sour cream or a nut sauce.
