Ingredients
- Kid goat - 10 lbs
- Milk - 5 qt
- Pumpkin - 5 lbs
- Vegetable Oil - 0 fl oz
- Butter - 5 oz
- Olive Oil - 0 fl oz
- Thyme - 0 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Gently warm the milk, add a generous handful of salt, a pinch of pepper, and a good bunch of thyme (set aside some thyme for garnish). Pour the milk into a suitable container, and marinate the goat for about three hours, turning it over in the milk and massaging it occasionally.
Step 2
Brush the marinated goat with vegetable oil and place it in an oven preheated to 250°F for one and a half hours, then increase the heat to 355°F and roast for an additional thirty minutes.
Step 3
At the same time as increasing the heat, place a baking tray with diced pumpkin in the oven. The pumpkin should be salted, peppered, drizzled with olive oil, topped with pieces of butter, and sprinkled with thyme.
