Kidneys in Wine Sauce
Ingredients
- Beef Kidneys - 17.6 oz
- Fresh Mushrooms - 7.1 oz
- Wheat Flour - 0.9 oz
- Chicken Broth - 3.5 oz
- Madeira - 1.8 oz
- Parsley - to taste
- Vegetable Oil - 1 fl oz
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Well-washed and previously soaked kidneys for 3–4 hours should be cut lengthwise, removing fat and membranes, placed in boiling water for a minute, drained, and sliced thinly at an angle.
Step 2
Cleaned and washed mushrooms should be boiled and finely chopped.
Step 3
Heat the fat and fry the kidneys together with the mushrooms over high heat, stirring continuously. Sprinkle with flour, reduce the heat, and fry for another 2 minutes. Pour in the wine mixed with broth, season with salt and pepper, and simmer.
Step 4
Serve, garnished with parsley, alongside mashed potatoes and a vegetable salad.
