Ingredients
- Mung Beans - 2.1 oz
- Kohlrabi - 31.7 oz
- Meyer Lemon Juice - 1 tablespoon
- Olive Oil - 3 tablespoons
- Capers - 2 tablespoons
- Spanish onions - ½ head
Step by Step guide
Step 1
Peel the kohlrabi and slice it very thinly using a mandoline. Transfer to a bowl.
Step 2
Using the mandoline, slice the red onion very thinly, place it in a sieve, rinse under cold water, and dry. Add to the kohlrabi.
Step 3
In a bowl, mix the lemon juice, 0.25 teaspoons of salt, and a pinch of pepper. Then slowly drizzle in the olive oil and add the capers. Pour over the vegetables, add the mung bean salad, mix well, and serve immediately.
