Korean-style Cucumbers with Meat
Ingredients
- English cucumber - 2 pieces
- Beef - 14.1 oz
- Onion - 1 piece
- Orange Bell Peppers - 1 piece
- Garlic - 2 cloves
- Red Long Chili Peppers - 1 tablespoon
- Sugar - 1⅕ spoons
- Ground coriander - 1 tablespoon
- 9% Vinegar - 2 spoons
- Soy Sauce - 4 spoons
- Salt - 1 tablespoon
- Vegetable Oil - 3 spoons
Step by Step guide
Step 1
Trim the ends of the cucumbers, cut them in half or into thirds, then slice each piece lengthwise into halves, and finally cut the halves into 3-4 slices.
Step 2
Place them in a bowl, sprinkle with salt, and let them sit for 15-20 minutes to release their juices.
Step 3
Cut the lean meat (preferably slightly thawed) into thin strips.
Step 4
Slice the onion into half-moons.
Step 5
Gently squeeze the cucumbers to remove some of their juice. On top of them, pile the red chili pepper, coriander, minced garlic, and sugar.
Step 6
Heat a skillet with vegetable oil thoroughly, keeping the heat high throughout the cooking process. Sear the meat. Once the liquid evaporates, brown it slightly while stirring constantly for about 1 minute, then immediately add the onion and mix. Next, add the soy sauce and cook for another couple of minutes, stirring...
Step 7
... and immediately pour all the contents of the frying pan over the cucumbers. Set aside.
Step 8
Slice the peppers into thin strips, place them on the meat, and pour vinegar over them.
Step 9
After 5 minutes, stir the salad. You can serve it immediately or chill it to room temperature. Enjoy your meal! :)
