Description
If you don't have Cointreau, it's not a problem. You can completely omit the alcohol from this sauce, or use any orange liqueur. It still turns out very tasty. Although I at least left in some brandy.
Ingredients
- Kumquat - 7.1 oz
- Butter - 3.5 oz
- Brown Sugar - 3.5 oz
- Oranges - 2 pieces
- Cointreau - 2 tablespoons
- Brandy - 1 tablespoon
- Lemon - ½ piece
Step by Step guide
Step 1
Heat the butter with the sugar in a saucepan, stirring constantly, until the sugar is completely dissolved.
Step 2
Finely grate the zest of one orange and half a lemon. Squeeze the juice from 2 oranges.
Step 3
Increase the heat and let the butter and sugar mixture boil until the sugar begins to caramelize.
Step 4
Add the zest and orange juice and let the sauce simmer for about 3–4 minutes until it thickens.
Step 5
Add the halved kumquat, Cointreau, and brandy, and cook for another 30 seconds.
Step 6
Reduce the heat to low and simmer for another 5 minutes.
Step 7
Serve with pancakes.
