Ingredients
- Skate Fillet - 8.5 oz
- Dill - 0.2 oz
- Onion - 2.1 oz
- Wheat Flour - 7.8 oz
- Fish Oil - 17 fl oz
- Milk - 1 fl oz
- Bay leaf - 1 piece
- Chicken Egg - 1 piece
- Butter - 0.4 oz
- Water - 3 fl oz
Step by Step guide
Step 1
Mix 40 ml of water, 40 ml of milk, and half an egg until smooth.
Step 2
Place a large mound of flour, make a well in the center, pour in the egg-milk mixture, add a pinch of salt, knead a soft elastic dough, wrap it in plastic wrap, and let it rest at room temperature for 1 hour.
Step 3
Peel and finely chop the onion, finely chop the dill, and mince the fish; mix the fish with the onion and half of the dill, season with salt and pepper, add 50 ml of water, and mix thoroughly.
Step 4
Separate 1/3 of the dough, sprinkle with flour from a small bag, roll it out into a pancake; cut the pancake into squares of 6x6 cm, place a teaspoon of filling in the center, fold the edges to form a triangle, and sprinkle with flour; roll out the remaining dough into a new pancake and repeat the process.
Step 5
Place the kundyubki on a baking sheet and bake in a preheated oven at 482°F for 5 minutes; bring the broth to a boil, add the bay leaf, season with salt and pepper.
Step 6
Transfer the kundyubki to the boiling broth, add a piece of butter, cover with a lid or foil, and bake in a preheated oven at 482°F for 5 minutes until cooked through.
Step 7
Sprinkle the kundyubki with the remaining dill, season with pepper, and serve with the broth.
