Ingredients
- Wheat Flour - 17.6 oz
- Water - 20 fl oz
- Chicken Egg - 1 piece
- Beef - 8.1 oz
- Onion - 3.5 oz
- Pork Blood - 9.2 oz
- Veal Liver - 5.3 oz
- Fresh Mushrooms - 3.5 oz
- Clarified Butter - 1.8 oz
- Barbecue sauce - 1.1 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Mix flour, 100 ml of water, egg, and salt to make the dough (set aside 50 g for baking). Roll the dough into a rope, cut into pieces, and roll each piece into rounds.
Step 2
Pass the meat and 50 g of onion through a meat grinder, season to taste, and dilute with a glass of water.
Step 3
Place a spoonful of filling on each round and shape into dumplings. Boil the dumplings in salted water until partially cooked.
Step 4
In a ceramic pot, place the dumplings, pour in some broth from boiling, add the sautéed liver, mushrooms, and onion cut into strips, pour over with sour cream mixed with Southern sauce, and cover with the remaining dumpling dough.
Step 5
Put the pot in the oven and bake until the dough is golden brown on top.
