Kyiv Cutlets (or Chicken Kyiv)

Ingredients

  • Butter - 5.3 oz
  • Bread roll - 1 piece
  • Chicken Egg - 2 pieces
  • Wheat Flour - 3 tablespoons
  • Vegetable Oil - 17 fl oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Skin-On Chicken Breasts - 2 pieces

Step by Step guide

Step 1

Grate the bread roll on a coarse grater. It's better to use slightly stale bread.

Step 2

Separate the fillet from the bone and divide it into 8 equal slices. Season with salt and pepper. Pound them on both sides.

Step 3

Cut the butter into cubes. Place a piece of butter in the center of each chicken slice, roll the fillet into a roll, and refrigerate for 30 minutes.

Step 4

Mix the eggs with flour and salt, and lightly beat them.

Step 5

Remove the chilled rolls, dip them on all sides in the egg mixture, then in the breadcrumbs. Press the meat with your hands to shape it into a cutlet. Repeat this three times to achieve triple breading.

Step 6

Heat the sunflower oil well (if you drop a crumb into it, it should sizzle - this means the oil is ready). Carefully place the cutlets in the pot, reduce the heat, and fry until golden brown, turning them occasionally. If the oil is too hot, the first batch of cutlets may burn immediately. In this case, it's better to fry until golden and then send the cutlets to the microwave for 2 minutes. With the next batches at reduced heat, there should be no problems.
