Description

This horseradish vodka is aptly named: it is soft and delicate, thanks to liquid honey, lemon juice, and cinnamon.

Ingredients

  • Horseradish Leaves - 5.3 oz
  • Honey - 4 spoons
  • Meyer Lemon Juice - 2 spoons
  • Vodka - 1 qt
  • Garlic - 5 cloves
  • Cinnamon - 1 piece
  • Green peppercorns - 4 pieces
  • Celery stalk - 2 pieces

Peel the horseradish, rinse it under running water, and remove any suspicious spots.

Cut the horseradish into four or five pieces, place them in ice-cold water, and let them soak for 5 hours. This step is optional, but it helps to remove excess bitterness and sharpness that can be harsh on the stomach. Additionally, it will be easier to chop or grate the horseradish afterward, as it will be less pungent.

In the meantime, prepare the honey: pour about 100 ml of vodka into a jar with a lid, add the honey. Mix well, close the jar, and shake it to combine the honey.

After 5 hours, remove the horseradish from the water, place it on a paper towel, and let it dry. Cut the horseradish into small cubes (do not grate it under any circumstances). Cut the celery into the same size cubes. Peel the garlic and cut it in half.

Place the horseradish and celery in a jar, add lemon juice, pour in the vodka with honey, add spices and black pepper. Mix everything well.

Add the remaining vodka, seal the jar tightly with a removable lid, and leave it in a cool, dark place (like a cupboard or cellar) for a week.

Every day, you need to open the jar and stir the contents. However, you can simply shake it vigorously.

Strain the infusion first through a sieve, then through two or three layers of cheesecloth or a coffee filter to make it perfectly clear.

Pour the infusion into a bottle, seal it, and let it rest for 3–4 days.
