Description
My wife — a modest lover of vegetables and rice — rated this dish as 'excellent', but noted that smoked ribs (or pieces of bacon, I think) would go perfectly with it! So decide for yourself how you want to prepare 'Lahanorizo'!
Ingredients
- White Cabbage - 17.6 oz
- Onion - 1 head
- Carrot - 2 pieces
- Spiced Tomato Juice - 3 fl oz
- Boiled White Round Rice - 3.5 oz
- Olive Oil - 3 fl oz
- Parsley - 1 bunch
- Salt - 1 teaspoon
- Green peppercorns - 10 pieces
- Ground coriander - a pinch
- Mild Chili Spice - 1 piece
- Scallions - 3 pieces
Step by Step guide
Step 1
Chop the cabbage into 500–800 grams. Cut the onion into large cubes and the carrot into rounds. Adjust the amount of carrot to your taste. I used 1 piece.
Step 2
In olive oil (I prefer butter in this case), gradually sauté the onion and carrot until translucent. Add the green onion. Add the cabbage and fry on high heat, stirring constantly, until the cabbage caramelizes.
Step 3
When the cabbage is slightly browned, add the tomato juice and spices (salt, coriander, black peppercorns). Mix well. Reduce the heat to low. Simmer until partially cooked.
Step 4
Add the round rice (rinse beforehand if necessary) and water, twice the amount of rice. So for 3/4 cup of rice — use 1.5 cups of water. Cover with a lid and simmer until the rice is cooked.
Step 5
Sprinkle the dish with chopped parsley.
Step 6
Add the chili pepper according to the tastes of your household, preferably freshly ground, directly into the plate.
