- Curry - ¾ teaspoon
- Turmeric - ¼ teaspoon
- Ground Cinnamon - 0.1 teaspoon
- Water - 10 fl oz
- Butter - 2 tablespoons
- Couscous - 7.9 oz
- Lamb Shoulder - 24.7 oz
- Courgette - 8.8 oz
- Natural Yogurt - 5.3 oz
- Peppermint leaves - 1 bunch
- Salt - 1 teaspoon
- Ground Black Pepper - ½ teaspoon
Step by Step guide
Step 1
In a small heavy-bottomed pot, combine curry, turmeric, cinnamon, a quarter teaspoon of black pepper, and lightly heat for about 1 minute. Then add 1.5 cups of water and half a teaspoon of salt, bringing it to a boil.
Step 2
Place the couscous in a large bowl, pour the boiling spiced water over it, cover with a plate or plastic wrap, and let it sit for 5-6 minutes.
Step 3
Meanwhile, heat a greased skillet or baking tray on a grill over medium-high heat. Season the lamb chops with salt and pepper and grill for about 6 minutes, turning once during cooking.
Step 4
While the meat is cooking, peel the raw zucchini and grate it coarsely. Add Greek yogurt, dried mint, salt to the zucchini, and mix thoroughly.
Step 5
Let the cooked lamb rest for 5 minutes and serve it with couscous. Serve the zucchini with yogurt as a sauce.
