Ingredients
- Lamb stomach - 17.6 oz
- Butter - 1.8 oz
- Dry White Wine - 2 fl oz
- Brandy - 0 fl oz
- Tarragon - 0.2 oz
- Chopped Sage Leaves - 0.5 oz
- Ground Cumin - 0.2 oz
- Toasted Cumin Seeds - 0.5 oz
Step by Step guide
Step 1
Cut the cleaned liver into strips 1 centimeter wide and the length of a pinky finger. Coat in spices.
Step 2
Heat the butter in a skillet and fry the liver for 5–10 minutes until a brown crust forms.
Step 3
Add the white wine, brandy, dry cumin, tarragon, chopped fresh parsley, and cumin seeds. Cook for 2 minutes, stirring constantly. Serve with lemon slices.
