Ingredients
- Onion - 2 heads
- Vegetable Oil - 3 tablespoons
- Garlic - 3 cloves
- Garam Masala - 1½ tablespoons
- Mild Chili Spice - ½ teaspoon
- Baking Tomatoes - 14.1 oz
- Passata Tomato Sauce - 1 tablespoon
- Campbell's Beef Broth - 17 fl oz
- Coconut Milk - 9 fl oz
- Fresh Mint - 6 tablespoons
- Rack of Lamb - 17.6 oz
- Ground coriander - 6 tablespoons
- Chicken Egg - 1 piece
- Lime - 1 piece
- Basmati rice - to taste
Step by Step guide
Step 1
Heat the oil in a large skillet. Sauté the finely chopped onion for 5 minutes until golden. Add the minced garlic, garam masala, and chili. Cook, stirring, for 2-3 minutes until fragrant. Transfer half of the mixture to a bowl and let it cool.
Step 2
Add the tomatoes and tomato paste to the skillet, mixing well. Simmer for 5 minutes, then add the broth and coconut milk. Bring to a boil, then remove from heat, cover, and let sit for a while.
Step 3
To the cooled onion mixture, add the ground meat, chopped herbs, and lightly beaten egg. Mix well with your hands and shape into 28 balls, about the size of a walnut. Cover and refrigerate for 30 minutes.
Step 4
Bring the tomato sauce to a boil. Place the meatballs in the sauce, cover, and simmer on low heat for 1 hour, until the sauce thickens, stirring gently during cooking. Add lime juice. Before serving, sprinkle with chopped mint and serve with cooked rice.
