Ingredients
- Rack of Lamb - 17.6 oz
- Butter - 3.5 oz
- Vegetable Oil - 3 fl oz
- Garlic - 4 cloves
- Anchovies - 1.8 oz
- Corn Cobs - 1 piece
Step by Step guide
Step 1
Prepare the lamb rack. Place it in the refrigerator wrapped in a towel for a day to remove all moisture.
Step 2
Before frying, let the lamb come to room temperature. Cut along the ribs so that each piece has 3–4 ribs. Sear in vegetable oil on each side, then place in the oven for 10–15 minutes at 356°F depending on the desired doneness.
Step 3
Sauce. Finely chop the garlic and anchovies. Mix together. In a saucepan, heat the vegetable oil, then add the butter. Add the garlic and anchovies. Do not let it boil. Whisk or blend as preferred. Season with salt and pepper to taste.
Step 4
Grill the cooked corn in butter. Cut in half for two servings.
Step 5
Before slicing the lamb along the ribs, cover it with a bowl for a few minutes. Then cut along each rib.
